Ingredients
- 1 cup sugar
- 3 eggs
- 1 can evaporated milk
- 1 ½ cups sweet potatoes (mashed)
- ½ stick melted butter
- ¼ teaspoon nutmeg
- Pinch of salt
- 1 unbaked pie shell
Directions
Preheat oven to 425°. In a mixing bowl, beat eggs & sugar together. Add salt, nutmeg, & evaporated milk, and beat well. In a separate bowl, add melted butter to sweet potatoes and beat. Add sweet potato/butter mixture to egg & sugar mixture and blend well. Pour into unbaked pie shell, and bake for 30 minutes. Cool before serving.
