Ingredients 
  • 1 cup sugar
  • 3 eggs
  • 1 can evaporated milk
  • 1 ½ cups sweet potatoes (mashed)
  • ½ stick melted butter
  • ¼ teaspoon nutmeg
  • Pinch of salt
  • 1 unbaked pie shell
Directions  Preheat oven to 425°.  In a mixing bowl, beat eggs & sugar together.  Add salt, nutmeg, & evaporated milk, and beat well.  In a separate bowl,  add melted butter to sweet potatoes and beat.  Add sweet potato/butter mixture to egg & sugar mixture and blend well.  Pour into unbaked pie shell, and bake for 30 minutes.  Cool before serving.
